Seedling:

- Cotyledons very narrow, lengthened ( > 10 times longer than broad).

- Leaves entire, lanceolate, more or less dentate.


Adult plant snapshot Adult plant:

- Height: 20-100 cm. Plant with a fusiform tap-root.

- Stem erect, simple or branched, glabrous.

- Leaves relatively broadly linear, semi-amplexicaul.

- Flowers purple-reddish or purple-grey, shorter than the involucre. Involucre of 5-12 bracts on 1 row.

- Fruit ripe greyish, outer with small spines or more or less acute tubercles on sides, inner smooth; the lower part of fruits is swollen and short.

- Plant cultivated for roots and young shoots eaten as green salad. High concentration of inulin in the roots.

- Biological type: biennial.
