Impact of age on salivation. The AlimaSSenS project, which started in January 2015 has provided its first results! From May to October, 84 elderly people aged 70 years or more came to the Centre des Sciences du Goût et de l’Alimentation to take part in mastication and salivation tests. By comparing their results with the results in younger people (22-55 years), we found that the flow of saliva diminishes with age, whatever the dental status of the senior citizens and whether or not they were taking medication.
